Serve boiled quail eggs on a bed of spiralized zucchini, spinach, and cherry tomatoes for a quick and easy vegetarian meal.

Ingredients: 

  • 1 cup spinach 
  • 1½ tbsp olive oil 
  • 13 medium quail eggs 
  • 2 pinches salt
  • 2 tbsp lemon juice 
  • ⅔ small zucchini 
  • 4 small cherry tomatoes

Instructions: 

  1. Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Set aside.
  2. Meanwhile, boil the quail eggs for 4–5 minutes. Let them cool.
  3. Serve the zucchini in a bowl with the spinach leaves, cherry tomatoes, and halved quail eggs.
  4. Season to taste with salt and ground black pepper. Drizzle with olive oil and lemon juice. Enjoy!
