Serve boiled quail eggs on a bed of spiralized zucchini, spinach, and cherry tomatoes for a quick and easy vegetarian meal.
Ingredients:
- 1 cup spinach
- 1½ tbsp olive oil
- 13 medium quail eggs
- 2 pinches salt
- 2 tbsp lemon juice
- ⅔ small zucchini
- 4 small cherry tomatoes

Instructions:
- Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Set aside.
- Meanwhile, boil the quail eggs for 4–5 minutes. Let them cool.
- Serve the zucchini in a bowl with the spinach leaves, cherry tomatoes, and halved quail eggs.
- Season to taste with salt and ground black pepper. Drizzle with olive oil and lemon juice. Enjoy!
