Zucchini Noodles With Tomatoes and Feta Recipe

Ingredients: 

  • ⅔ cup feta cheese, cubed
  • ½ tbsp olive oil
  • 1 small zucchini
  • 1 tbsp cream cheese, 34% fat
  • 1 pinch ground black pepper
  • 5 medium cherry tomatoes, quarters

Instructions:

  1. Cut the zucchini into thin, noodle-like strips, or use a vegetable spiralizer. 
  2. Heat olive oil in a pan over medium-high heat. Add the zucchini noodles and cook for 2–3 minutes, until tender. 
  3. Add cream cheese and ground black pepper to the pan with the zucchini noodles and stir well. 
  4. Serve the zucchini noodles on a plate with feta cheese and cherry tomatoes. Enjoy!
