Tender shrimp, tangy tomatoes, and spicy zucchini noodles create a healthy meal.

Ingredients: 

  • 3.35oz/95g shrimp, raw
  • 1 zucchini, small
  • 6 medium cherry tomatoes, halved
  • 2 tbsp olive oil
  • 2 pinches salt
  • 1 pinch ground black pepper

Instructions: 

  1. Cut the zucchini into thin, noodle-like strips using a peeler or use a vegetable spiralizer. Toss with a pinch of salt, and place in a colander to drain for 10 minutes. 
  2. Season shrimp with a pinch of salt and ground black pepper. 
  3. Heat half of the olive oil in a frying pan over medium heat. Add the shrimp to the pan in a single layer, sauté for 1–2 minutes or until the shrimp starts to turn pink around the edges, then flip and cook until the shrimp are cooked through, for about 1–2 minutes.
  4. Meanwhile, in a separate frying pan, heat the remaining olive oil over medium heat. Add zucchini noodles and cherry tomatoes and cook for 2–3 minutes. 
  5. Serve the zucchini noodles, cherry tomatoes, and shrimp on a plate. Enjoy!
