Zucchini Noodles With Chicken Recipe

They’re low in calories, super satisfying, and taste like whatever you toss them into – making them the perfect carrier for sauces.

Ingredients: 

  • 2 tbsp olive oil 
  • 2 pinches salt 
  • 1 pinch ground black pepper
  • 1 tbsp lemon juice
  • 85g/3oz chicken breast, raw
  • 1 small zucchini
  • 2 cloves garlic, minced
  • 1 pinch oregano, dried
  • 1 pinch basil, dried

Instructions:

  1. Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with a pinch of salt and drain in a colander for 10 minutes.
  2. Meanwhile, heat half the olive oil in a non-stick frying pan over medium heat. Add the garlic and cook for 30 seconds.
  3. Cut the chicken into bite-sized pieces. Season with a pinch of salt, ground black pepper, dried oregano, and basil.
  4. Add the chicken pieces to the pan and cook for 3–4 minutes on each side or until golden brown and no longer pink inside.
  5. Add the zucchini noodles and cook for another 2 minutes. 
  6. Serve the chicken and zucchini noodles on a plate. Drizzle with the remaining olive oil and lemon juice. Enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
