Zucchini, Mozzarella, and Feta Rolls Recipe

Ingredients: 

  • 1 cup canned tomatoes
  • ⅓ cup feta cheese, crumbled 
  • 1 pinch ground black pepper
  • 2 pinches dried oregano
  • 1 large zucchini 
  • 6 fresh basil leaves
  • ⅔ cup mozzarella cheese, shredded, whole-milk 
  • 4 tsp olive oil

Instructions: 

  1. Preheat the oven to 425°F/220°C.
  2. Using a vegetable peeler peel the zucchini into wide strips. Lay them flat on the surface and add feta, mozzarella, oregano, and ground black pepper. Roll them.
  3. Coat oven-safe skillet with olive oil. Add the zucchini rolls and pour the canned tomatoes over the top. Bake for 10 minutes.
  4. Once done, transfer onto a plate, garnish with basil leaves, and enjoy!
