Zucchini, Feta, and Spinach Salad Recipe

The combination of textures and flavors makes it a light and satisfying meal that is easy to prepare and highly nutritious.

Ingredients:

  • 1 cup spinach 
  • ½ cup feta cheese, crumbled
  • 1 tbsp olive oil
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tsp lemon juice
  • 1 small zucchini
  • 1 pinch ground paprika

Instructions: 

  1. Slice zucchini. Combine half of the olive oil, ground paprika, a pinch of salt, and a pinch of ground black pepper in a bowl. Add the zucchini slices and toss to coat. 
  2. Heat a grill or a grill pan to high heat. Add the zucchini slices and grill for 1–2 minutes on each side until lightly browned. 
  3. Meanwhile, for the dressing, mix together the remaining olive oil, lemon juice, a pinch of salt, and ground black pepper in a small bowl. 
  4. Assemble zucchini slices, feta cheese, and spinach on a plate. Drizzle with the prepared dressing. Enjoy!
