Ingredients: 

  • ⅓ cup crumbled feta cheese 
  • ½ tbsp olive oil 
  • 1 pinch salt 
  • 1 pinch ground black pepper 
  • 2 tsp lemon juice 
  • 1 small zucchini 
  • 1 tbsp pine nuts 
  • 2 tbsp fresh parsley, chopped 
  • 2 pinches dried oregano 
  • 2 pinches dried basil

Instructions: 

  1. Slice the zucchini. Season with salt, ground black pepper, dried oregano, and dried basil.
  2. Heat olive oil in a pan over medium-high heat. Add zucchini slices in one layer and fry for a few minutes on each side. Feel free to use a grill or griddle if you have one to fry the zucchini.
  3. Meanwhile, heat a different pan. When hot, add pine nuts. No oil is needed. Turn the heat to medium-low and cook the pine nuts stirring occasionally, until they are golden brown and smell quite nutty.
  4. Assemble the fried zucchini slices on a plate. Top with crumbled feta cheese and pine nuts. Drizzle with lemon juice. Enjoy!
