Ingredients: 

  • 1 large cauliflower, cut in florets
  • 1 garlic clove, minced
  • 1 medium zucchini, grated
  • 1 cup vegan cheese, finely grated
  • ¼ cup almond flour
  • 2 tbsp vegan sour cream
  • 1 tsp olive oil
  • 1 tsp onion flakes
  • Salt and pepper, to taste

How to prepare:

  1. Crush cauliflower florets in a food processor.
  2. Squeeze as much moisture out of grated zucchini as possible. 
  3. Mix the cauliflower, almond flour, garlic, onion flakes, grated zucchini, and vegan cheese.
  4. Stir the cauliflower mixture, and add salt and ground black pepper. 
  5. Heat olive oil in a frying pan over medium heat.
  6. Use a tablespoon to scoop the batter and place six fritters, or more, in your frying pan. Flatten the fritters with a spoon.
  7. Cook the fritters for 5 minutes on each side until they are crispy and golden brown, then transfer to a plate and cover with foil while you cook the next batch. 
  8. Serve fritters on a plate with sour cream.
