It’s so quick and easy to make that you can incorporate it into your weekly meal plan.

Ingredients: 

  • 1 tbsp onion, chopped 
  • 2 cloves garlic, minced 
  • 2 tbsp olive oil 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1 large zucchini 
  • 3 tbsp pumpkin seeds 
  • 1 cup arugula leaves 
  • 2 tbsp lemon juice 
  • 1 tbsp pea protein powder 
  • 6 tbsp Greek yogurt, 4% fat

Instructions: 

  1. Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with salt and drain in a colander for 10 minutes.
  2. Heat half the olive oil in a non-stick frying pan over medium heat. Add the chopped onion and cook for 30 seconds.
  3. Add the zucchini noodles and cook for 2–3 minutes. Season to taste with a pinch of salt and ground black pepper.
  4. Meanwhile, mix Greek yogurt with minced garlic, protein powder, remaining olive oil, and lemon juice. Season to taste with salt and ground black pepper.
  5. Serve the zucchini noodles on a plate with arugula leaves, pumpkin seeds, and Greek yogurt dressing. Enjoy!
