Try this yogurt dressing over spiralized zucchini for a keto vegetarian meal that's high in fat and protein.
It’s so quick and easy to make that you can incorporate it into your weekly meal plan.
Ingredients:
- 1 tbsp onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 1 large zucchini
- 3 tbsp pumpkin seeds
- 1 cup arugula leaves
- 2 tbsp lemon juice
- 1 tbsp pea protein powder
- 6 tbsp Greek yogurt, 4% fat

Instructions:
- Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with salt and drain in a colander for 10 minutes.
- Heat half the olive oil in a non-stick frying pan over medium heat. Add the chopped onion and cook for 30 seconds.
- Add the zucchini noodles and cook for 2–3 minutes. Season to taste with a pinch of salt and ground black pepper.
- Meanwhile, mix Greek yogurt with minced garlic, protein powder, remaining olive oil, and lemon juice. Season to taste with salt and ground black pepper.
- Serve the zucchini noodles on a plate with arugula leaves, pumpkin seeds, and Greek yogurt dressing. Enjoy!
*NOTE: Feel free to substitute our suggested protein powder with any other unsweetened protein powder you have.
