Zoodles With Yogurt-Avocado Dressing Recipe

Ingredients: 

  • 1 tbsp onion, chopped 
  • 2 cloves garlic, minced 
  • 3½ tbsp olive oil 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1 large zucchini 
  • 2 tbsp lemon juice
  • 1½ tbsp pea protein powder 
  • ½ cup Greek yogurt, 4% fat 
  • 1 large avocado, mashed 
  • 2½ tbsp fresh cilantro, chopped
  • 1 cup cherry tomatoes, halved

Instructions: 

  1. Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with salt and drain in a colander for 10 minutes.
  2. Heat half the olive oil in a non-stick frying pan over medium heat. Add the chopped onion and cook for 30 seconds.
  3. Add the zucchini noodles and cook for 2–3 minutes. Season to taste with a pinch of salt and ground black pepper.
  4. Meanwhile, mix Greek yogurt with minced garlic, mashed avocado, protein powder, remaining olive oil, and lemon juice. Season to taste with salt and ground black pepper.
  5. Serve the zucchini noodles on a plate with Greek yogurt-avocado dressing and sprinkle with chopped cilantro. Enjoy!
