Let us introduce you to this creamy, low-carb zucchini noodle dish. High in protein and healthy fats, it's a must-have on your vegetarian keto diet menu.
Ingredients:
- 1 tbsp onion, chopped
- 2 cloves garlic, minced
- 3½ tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 1 large zucchini
- 2 tbsp lemon juice
- 1½ tbsp pea protein powder
- ½ cup Greek yogurt, 4% fat
- 1 large avocado, mashed
- 2½ tbsp fresh cilantro, chopped
- 1 cup cherry tomatoes, halved

Instructions:
- Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with salt and drain in a colander for 10 minutes.
- Heat half the olive oil in a non-stick frying pan over medium heat. Add the chopped onion and cook for 30 seconds.
- Add the zucchini noodles and cook for 2–3 minutes. Season to taste with a pinch of salt and ground black pepper.
- Meanwhile, mix Greek yogurt with minced garlic, mashed avocado, protein powder, remaining olive oil, and lemon juice. Season to taste with salt and ground black pepper.
- Serve the zucchini noodles on a plate with Greek yogurt-avocado dressing and sprinkle with chopped cilantro. Enjoy!
