Zoodles With Cucumber, Tomatoes, and Feta Recipe

Ingredients: 

  • 1 tbsp onion, chopped 
  • 1 clove garlic, minced 
  • 1½ tbsp olive oil 
  • 2 pinches salt 
  • 2 pinches ground black pepper 
  • 1 medium zucchini 
  • ½ small cucumber, sliced
  • 1 cup feta cheese, crumbled 
  • ½ cup cherry tomatoes, halved
  • 2 fresh basil leaves

Instructions: 

  1. Cut zucchini into thin noodle-like strips or use a vegetable spiralizer. Toss with salt and drain in a colander for 10 minutes.
  2. Heat olive oil in a non-stick frying pan over medium heat. Add garlic and onion and cook for 30 seconds.
  3. Add zucchini noodles, sliced cucumber, and halved cherry tomatoes. Cook for 2–3 minutes. Season to taste with salt and ground black pepper. Add crumbled feta cheese.
  4. Serve with basil leaves. Enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
