Greek Yogurt, Mascarpone, and Blueberry Parfait Recipe

Ingredients: 

  • 2 drops vanilla extract
  • 3 drops stevia liquid
  • 1 tbsp mascarpone
  • ½ cup Greek yogurt, 4% fat
  • 1 tbsp blueberries
  • 2 tsp unsalted almonds, chopped
  • 3 tbsp walnuts, chopped
  • 1 tsp lemon juice
  • 4 leaves fresh mint

Instructions:

  1. In a bowl, mix the Greek yogurt with mascarpone, lemon juice, vanilla extract, and stevia liquid. 
  2. In a serving glass or another dish, add half of the chopped almonds and walnuts.
  3. Top with the yogurt-mascarpone mixture, the remaining nuts, blueberries, and mint leaves. Enjoy!
