Walnut Cauliflower Risotto Recipe

Ingredients:

  • ½ small cauliflower, chopped
  • ½ cup parmesan cheese, grated
  • 1½ tbsp walnuts, chopped
  • ½ tbsp butter
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ tbsp lemon juice
  • ⅓ cup heavy cream, 36% fat
  • 1 pinch onion powder

Instructions: 

  1. Place cauliflower in a food processor and pulse until the mixture resembles rice. Set aside. 
  2. Heat a non-stick frying pan over low heat. Add heavy cream, butter, lemon juice, and onion powder. Stir well. 
  3. Add cauliflower rice, salt, and ground black pepper, and simmer for 10–15 minutes, stirring often. 
  4. Add parmesan cheese and stir well. 
  5. Serve in a bowl, top with walnuts, and enjoy!
