Vegetable Soup Recipe

Are you craving some soup on a cold evening but don’t have the energy to do a lot? Here is a recipe for one of the easiest vegan keto diet soups.

Ingredients: 

  • 4 cups vegetable broth
  • ¼ small onion 
  • 1 garlic clove, minced 
  • ⅓ cup green beans
  • 1 bell pepper
  • ½ medium cauliflower, cut into florets
  • 2 medium celery stalks
  • 2 tbsp olive oil
  • Salt and pepper, to taste

How to prepare:

  1. Chop the celery and dice bell pepper and onion. 
  2. Heat the olive oil in a large pot or dutch oven over low/medium heat. Chop the celery and onion while the oil heats. Add the garlic, onion, and green beans to the pot. Cook to make them soft and fragrant for 3–4 minutes.
  3. Add salt and pepper to taste.
  4. Add cauliflower florets and bell pepper to the pot and cook for another 2–3 minutes.
  5. Add the vegetable stock to the pot, then mix and boil gently. Simmer the soup for 7–8 minutes to soften the vegetables. 
  6. Add more salt and pepper, if necessary.
