Ingredients: 

  • ½ cup lettuce, chopped 
  • 1 cup spinach
  • 1 small avocado, sliced 
  • 1½ tbsp olive oil 
  • 3.5oz/100g shrimp, raw 
  • 6 medium cherry tomatoes, halved 
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1 tbsp lemon juice

Instructions: 

  1. Heat half of the olive oil in a frying pan over medium-high heat. 
  2. Season the shrimp with a pinch of salt and a pinch of ground black pepper. Add the shrimp to the pan in a single layer and sauté for 1–2 minutes on each side. 
  3. In a bowl, combine lettuce, spinach, cherry tomatoes, and avocado. Drizzle with lemon juice and the remaining olive oil. Season the salad with salt and ground black pepper. Add shrimp on top, and enjoy!
