Vegetable Breakfast Bowl with Smoked Salmon Recipe

All variations with eggs and different vegetables will help to extend your keto menu.

Ingredients:

  • ½ cup lettuce, chopped
  • ½ medium cucumber, sliced 
  • ½ medium avocado, sliced
  • 1 tbsp lemon juice 
  • 2oz/55g salmon filet, smoked 
  • 2 tsp olive oil 
  • Salt and pepper, to taste 
  • ½ tbsp chia seeds
  • 1 medium egg 
  • ¼ cup olives

Instructions:

  1. Boil the egg for 10min in a pot of simmering water. Drain, cool under cold running water, and peel.
  2. In a serving bowl, assemble the sliced lettuce, avocado, cucumber, and olives. Drizzle with lemon juice and olive oil. Sprinkle chia seeds on top.
  3. Add chopped smoked salmon and halved egg on top of the salad. Season with salt and ground black pepper. Enjoy!
