This low-carb keto breakfast bowl with vegetables and smoked salmon will help you stay in ketosis.
All variations with eggs and different vegetables will help to extend your keto menu.
Ingredients:
- ½ cup lettuce, chopped
- ½ medium cucumber, sliced
- ½ medium avocado, sliced
- 1 tbsp lemon juice
- 2oz/55g salmon filet, smoked
- 2 tsp olive oil
- Salt and pepper, to taste
- ½ tbsp chia seeds
- 1 medium egg
- ¼ cup olives

Instructions:
- Boil the egg for 10min in a pot of simmering water. Drain, cool under cold running water, and peel.
- In a serving bowl, assemble the sliced lettuce, avocado, cucumber, and olives. Drizzle with lemon juice and olive oil. Sprinkle chia seeds on top.
- Add chopped smoked salmon and halved egg on top of the salad. Season with salt and ground black pepper. Enjoy!
