Vegan Walnut Chili Recipe

Ingredients for 4 servings:

  • 5 tbsp avocado oil   
  • 5 medium stalks celery, diced
  • 2 medium bell pepper, diced
  • 1 medium zucchini, chopped
  • 3 cups mushrooms, chopped
  • 4 medium jalapeños, chopped
  • ½ tbsp tomato paste 
  • 3 medium tomatoes, diced
  • 4 cups vegetable broth
  • ½ cup coconut milk, unsweetened  
  • 1⅓lb/600g vegan meat crumbles 
  • 2 tbsp walnuts, chopped
  • 1 garlic clove, minced
  • ½ tsp ground cinnamon 
  • 2 tsp chili powder
  • 4 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

How to prepare:

  1. Heat the avocado oil in a frying pan over medium heat. Add celery to a pan and stir occasionally for 4–5 minutes until they are softened.
  2. Add ground cinnamon, chili powder, ground cumin, smoked paprika, and garlic. Blend them.
  3. Put bell pepper, zucchini, and mushrooms in the pan. Season with salt and ground black pepper. Cook for 4–6 minutes.
  4. Add the jalapeño, tomato paste, tomato, vegetable broth, coconut milk, vegan meat crumble, and walnuts. Stir thoroughly. Cook for 20–25 minutes until it is thick and hot. Serve and enjoy!
