Vegan Peanut Butter and Blueberry Smoothie Bowl Recipe

It’s easy, yummy, and looks as good as it tastes!

Ingredients: 

  • 1 tbsp blueberries
  • 2 tbsp unsalted almonds, chopped
  • 1 tbsp chia seeds
  • 3 tbsp peanut butter 
  • 4 drops liquid stevia 
  • ⅓ cup almond/coconut yogurt
  • 2 tbsp pumpkin seeds 
  • ¾ cup almond milk, unsweetened

How to prepare:

  1. Mix chia seeds with ⅔ of the almond milk in a bowl. Let it sit for 5 minutes. 
  2. Add remaining almond milk, stevia liquid, almond yogurt, peanut butter, half of the pumpkin seeds, and half of the almonds to a blender and blend until smooth. 
  3. Adjust consistency by pouring in some cold water if necessary, then blend again. 
  4. Serve in a bowl. Mix in chia and the remaining finely chopped pumpkin seeds and almonds. Top with blueberries, and enjoy!
