Ingredients: 

  • 1 tbsp unsalted butter
  • 1 tbsp ground flaxseed + 3 tbsp water, a replacement for eggs
  • 3 tbsp almond flour
  • ½ tsp baking powder
  • 1 tbsp erythritol sweetener, granular
  • ½ tsp vanilla
  • ½ tsp cinnamon

How to prepare:

  1. Mix the almond flour, baking powder, and sweetener. 
  2. Melt the butter and combine it with the flaxseed and water mix. Add in vanilla. Add the mixture to the dry ingredients. Mix it all well so that it resembles a cake batter. 
  3. Use chopsticks to swirl the mixture and sprinkle it with cinnamon.
  4. Put your butter into a mug; pick a bigger one.
  5. Microwave the mug for 60 seconds (800-watt microwave). Check to see if the cake is bouncy or has a moist top. If so, microwave it for another 10 seconds.
