Tuna and Egg Bowl With Veggies Recipe

Ingredients: 

  • ¼ small red onion, sliced
  • ½ small cucumber, chopped
  • 1 cup spinach
  • ½ small avocado, chopped
  • 1 tbsp sesame seeds 
  • 1½ tbsp olive oil
  • 1 egg
  • 1 pinch salt
  • 1 pinch ground black pepper
  • ½ tbsp lemon juice
  • 4 cherry tomatoes, halved
  • 1 tuna, canned in water
  • 2 tbsp fresh dill, chopped

Instructions: 

  1. Place the egg/eggs into a saucepan, cover with cold water, and place over high heat. Bring it to a boil, then reduce the heat to low and simmer for about 4–5 minutes (cook for a little longer if you prefer the egg/eggs to be medium done). Cool, peel, and slice in half. 
  2. Meanwhile, mix together olive oil, lemon juice, dill, salt, and ground black pepper in a bowl. 
  3. In a serving bowl, add spinach, red onion, avocado, cucumber, cherry tomatoes, tuna, and egg/eggs. Drizzle with the dressing and toss to combine. Sprinkle with sesame seeds, and enjoy!
