Tofu Scramble With Vegetables Recipe

This simple dish provides you with the proteins, fats, and vitamins you need to have the energy to tackle your to-do list.

Ingredients:

  • 1 clove minced garlic
  • 160g/5.5oz tofu
  • 1½ tbsp olive oil
  • 1 pinch ground black pepper
  • 1 pinch curry powder, without added salt
  • 1 pinch salt
  • 2 medium cherry tomatoes, chopped
  • ½ small bell pepper, chopped
  • 1 tbsp fresh scallions, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 pinch chili powder

Instructions:

  1. Heat olive oil in a frying pan over medium-high heat. Add garlic and cook for 30 seconds. Then add cherry tomatoes and bell pepper, and cook for 2–3 minutes.
  2. Crumble tofu with a fork and season with salt, ground black pepper, curry powder, and chili powder (optional). Add crumbled tofu to the pan, mix well, and cook for another 5–7 minutes until tofu is slightly browned.
  3. Serve on a plate. Garnish with parsley and scallions. Enjoy!
