Tofu With Salad Greens and Cucumber Recipe

Ingredients: 

  • ½ medium cucumber, sliced 
  • ⅔ cup tofu, cubes
  • 2 tsp sesame seeds 
  • 1 tbsp olive oil
  • Salt, to taste
  • ½ tsp ground black pepper
  • ½ tsp ground paprika 
  • ½ tsp curry powder
  • 1 tbsp fresh parsley, chopped 
  • 1 tomato, sliced
  • 1 tsp lime juice 
  • 1 cup salad greens, chopped

How to prepare:

  1. Season cubed tofu with ground paprika, ground black pepper, curry powder, and salt. 
  2. Heat canola oil in a non-stick frying pan over medium heat. Add tofu cubes and cook for 3–4 minutes on each side until golden brown. 
  3. Add salad greens, cucumber, parsley, and tofu into a bowl. Sprinkle it with sesame seeds and drizzle lime juice. 
  4. Enjoy! Feel free to adjust the seasoning to your taste or use your favorite spices instead.
