Tofu and Bell Pepper Stir-Fry Recipe

Ingredients: 

  • 120g/4.2oz tofu
  • 1½ tbsp olive oil 
  • 1 tbsp tamari 
  • 2 pinches salt 
  • 2 pinches ground black pepper
  • 2 pinches smoked paprika
  • 1 clove minced garlic
  • ½ tbsp lemon juice
  • 1 small bell pepper, sliced
  • 6 leaves fresh basil

Instructions: 

  1. Chop the tofu into even cubes and mix it in a bowl with tamari sauce, a pinch of smoked paprika, salt, and ground black pepper.
  2. Heat half of the olive oil in a pan over medium heat. Add minced garlic and fry for 30 seconds. Then add the tofu cubes and fry for 2–3 minutes on each side or until golden brown. Remove from the pan and set aside. 
  3. Heat the remaining olive oil in the same pan over medium heat and add the sliced bell pepper. Season with a pinch of salt, ground black pepper, and smoked paprika. Stir-fry for 3–4 minutes or until slightly tender.
  4. Serve the tofu and bell pepper in a bowl. Drizzle with lemon juice and add basil leaves on top. Enjoy!

*NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
