Toast With Scrambled Eggs and Salad Recipe

Ingredients: 

  • 2 medium eggs
  • 1 tbsp olive oil
  • 1 handful arugula leaves 
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 4 small cherry tomatoes, quarters 
  • 2 tbsp heavy cream, 36% fat 
  • 2 slices low-carb bread 
  • 3 tbsp grated cheddar cheese

Instructions: 

  1. Whisk the eggs with heavy cream, a pinch of salt, and a pinch of ground black pepper in a bowl. 
  2. Heat a frying pan with olive oil over medium heat. Pour the egg mixture into the pan and cook, frequently stirring, until the eggs are cooked but remain soft and silky. 
  3. Toast the bread. Divide grated cheddar cheese between bread slices. Then, add it to the microwave and heat for 20–30 seconds or until the cheese melts. 
  4. Top each bread slice with scrambled egg, cherry tomatoes, and arugula. Sprinkle with salt and ground black pepper. Serve on a plate, and enjoy!
