Toast With Egg Salad Recipe

Serve it on a slice of toasted low-carb bread to enjoy a low-carb, high-fat keto breakfast.

Ingredients: 

  • ½ cup lettuce, chopped 
  • 1 tsp mustard
  • 1 medium egg 
  • 1 pinch salt
  • 1 slice low-carb bread 
  • 1 tbsp fresh chives, chopped 
  • 1 tbsp mayonnaise
  • Ground black pepper, to taste 
  • 1 tsp butter

Instructions: 

  1. Bring a pot to a boil over medium-high heat and add the egg. Cook for 10 minutes. Once done, place in cold water, remove eggshells and roughly chop the egg. 
  2. In a mixing bowl, mix chopped egg with chives, mustard, mayonnaise, a pinch of salt, and ground black pepper. 
  3. Toast the bread slice in a toaster (if desired) and spread butter. 
  4. On a serving plate, serve toast topped with egg mixture, and enjoy! 

NOTE: Feel free to garnish the meal with fresh herbs or sprouts of your choice.
