Turn your hard-boiled eggs into a tangy salad with lettuce, mustard, chives, and mayonnaise.
Serve it on a slice of toasted low-carb bread to enjoy a low-carb, high-fat keto breakfast.
Ingredients:
- ½ cup lettuce, chopped
- 1 tsp mustard
- 1 medium egg
- 1 pinch salt
- 1 slice low-carb bread
- 1 tbsp fresh chives, chopped
- 1 tbsp mayonnaise
- Ground black pepper, to taste
- 1 tsp butter

Instructions:
- Bring a pot to a boil over medium-high heat and add the egg. Cook for 10 minutes. Once done, place in cold water, remove eggshells and roughly chop the egg.
- In a mixing bowl, mix chopped egg with chives, mustard, mayonnaise, a pinch of salt, and ground black pepper.
- Toast the bread slice in a toaster (if desired) and spread butter.
- On a serving plate, serve toast topped with egg mixture, and enjoy!
NOTE: Feel free to garnish the meal with fresh herbs or sprouts of your choice.
