Ingredients: 

  • 1 clove garlic, minced 
  • ⅓ cup parmesan cheese, grated 
  • 2 tbsp olive oil 
  • 5 pieces sun-dried tomatoes 
  • ⅓ cup ricotta cheese 
  • 1½ medium zucchini 
  • 1 pinch Italian seasoning

Instructions: 

  1. Mix ricotta cheese with Italian seasoning, olive oil, and minced garlic.
  2. Using a spiralizer or vegetable peeler, julienne zucchini into zoodles. Blanch with boiling water in a colander.
  3. Transfer zoodles to a bowl, add ricotta mix, and stir well.
  4. Transfer to a plate, add sun-dried tomatoes, sprinkle parmesan, and enjoy!
