Strawberry Salad With Tofu Recipe

The sweet strawberries, in combination with tofu and red onion, will be an amazing discovery for your taste buds. 

Ingredients: 

  • ¼ red onion, chopped
  • 4 tbsp tofu, cubes 
  • ½ cup strawberries, halved
  • 5 pecan nuts, chopped 
  • 2 tsp lemon juice
  • ½ tsp Dijon mustard 
  • 1½ salad greens, chopped 
  • 1 tbsp olive oil 
  • Salt and pepper, to taste

How to prepare:

  1. In a large bowl, whisk the lemon juice with mustard. While whisking, slowly pour the olive oil until the dressing is combined. Season with salt and ground black pepper. 
  2. Chop the onion and slice the tofu into cubes. 
  3. Add salad greens, strawberries, and onion to the bowl with the dressing and toss to combine.
  4. Serve the salad on a plate and top it with chopped pecans and cubed tofu. Enjoy!
