Serve sliced chicken filet on a bed of spinach and sliced bell peppers for a weeknight meal that takes only minutes to prepare.
Ingredients:
- 1 small bell pepper, sliced
- 2 tbsp olive oil
- 2 pinches salt
- 2 pinches ground black pepper
- 3.5oz/100g chicken breast, raw
- 1 pinch dried basil
- 1½ cup spinach
- 2 tsp lemon juice
- 1 pinch dried oregano

Instructions:
- Season the chicken with a pinch of salt, ground black pepper, and dried oregano.
- Heat half of the olive oil in a frying pan over medium heat. Add chicken and cook for 4–5 minutes on each side or until golden brown and no longer pink inside.
- Assemble spinach, bell pepper, and sliced chicken on a plate. Drizzle with the remaining olive oil and lemon juice. Season with a pinch of salt, ground black pepper, and dried basil. Mix everything and enjoy!
