Spinach and Cheese Omelet Recipe

Ingredients: 

  • 1 small tomato, wedges
  • 1 small cucumber, sliced
  • 1 handful spinach
  • 1½ tbsp olive oil
  • 2 medium eggs
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tbsp fresh parsley, chopped
  • 3 tbsp cheddar cheese, grated
  • 2 tbsp water

Ingredients: 

  1. Whisk the eggs with water until smooth and slightly frothy. Add half of the cheddar cheese, salt, and ground black pepper, and mix through. 
  2. Heat the olive oil in a frying pan over medium-high heat. Pour in the egg mixture and let it sit for a few minutes.
  3. Lower the heat and continue to cook until the egg mixture is almost cooked through. Add in spinach and fold the omelet, sprinkle with parsley and the remaining cheddar cheese. Cover the pan with a lid and cook for 3–5 minutes until the cheese is melted (if you are using frozen spinach, remove the lid and cook for a few minutes more until the water evaporates). 
  4. Serve the omelet on a plate with cucumber and tomato. Enjoy!
