Souffle Omelet with Cheese Recipe

Ingredients: 

  • ¼ cup parmesan cheese, grated
  • 1 tsp olive oil 
  • 1 tsp butter 
  • 3 medium eggs 
  • 2 pinches salt 
  • 2 pinches ground black pepper

Instructions: 

  1. Separate the egg yolks into a small bowl and the egg whites into a large one. Beat egg yolks with salt and ground black pepper until well combined. 
  2. Using a whisk or electric hand blender, beat egg whites in the large mixing bowl until firm and glossy peaks form. 
  3. Add half of the beaten egg whites to yolks and stir well until whites are thoroughly combined. Mix in half of the parmesan cheese.
  4. Add the remaining egg whites, and using a spatula, gently fold them into a well-combined mixture. Don’t over-mix.
  5. Heat olive oil and butter in a non-stick frying pan over medium heat. Add the egg mixture into the pan, spread it evenly over the bottom of the pan, and cover with a lid. Cook for 4–5 minutes or until the bottom of the omelet is browned and the top is just barely set.
  6. Sprinkle the remaining parmesan cheese on top and cover once more. Cook for about 1 minute or until the cheese is melted. 
  7. Carefully slide the omelet onto a serving plate and fold it over itself. Enjoy! 

NOTE: Feel free to garnish the meal with fresh herbs or sprouts of your choice.
