Ingredients: 

  • 3oz/85g salmon filet, smoked
  • 1 cup spring mix salad
  • 7 medium cherry tomatoes, quarters
  • 1 pinch salt 
  • 1 pinch ground black pepper 
  • 2 tsp lemon juice
  • 1½ tbsp olive oil

Instructions: 

  1. Assemble spring mix salad, smoked salmon slices, and cherry tomatoes in a bowl.
