Shrimp With Tomatoes and Cauliflower Rice Recipe

Ingredients: 

  • 1 clove garlic, minced
  • ¾ cup cauliflower, in florets
  • 2 tbsp olive oil
  • 80g/2.8oz shrimp, raw
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 2 tbsp fresh cilantro, chopped
  • 1 pinch smoked paprika
  • 1 pinch chili powder
  • 1 tbsp lemon juice
  • 4 medium cherry tomatoes, chopped

Instructions: 

  1. Add cauliflower florets into a food processor and pulse until the mixture resembles rice (or grate it using a box grater). Set aside.
  2. In a bowl, mix together the lemon juice, half of the olive oil, minced garlic, chili powder (optional), cumin, smoked paprika, salt, and ground black pepper. Add shrimp and stir well.
  3. Heat a frying pan over medium heat. Add shrimp with olive oil sauce to the pan and cook for 1–2 minutes on each side or until cooked through, then remove and set aside.
  4. In the same pan, add the remaining olive oil and cauliflower rice and cook for 3–5 minutes until warmed through. Mix in chopped cherry tomatoes.
  5. Serve the cauliflower rice with tomatoes in a bowl and top with fried shrimp and chopped cilantro. Enjoy!

*NOTE: Feel free to use frozen cauliflower.
