Shrimp Skewers With Vegetable Salad Recipe

Ingredients:

  • 110g/3.8oz shrimp, raw
  • 1 small cucumber, chopped
  • 3 tbsp olive oil
  • 2 tsp lime juice
  • 1 clove garlic, minced
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 2 pinched dried oregano
  • 6 medium cherry tomatoes, quarters

Instructions: 

  1. Add olive oil, lime juice, garlic, salt, ground black pepper, and oregano to a mixing bowl and whisk together. Set aside half the amount of the prepared mixture for later use. Place shrimp in the bowl with the prepared sauce. Mix together gently until the shrimp are well coated. 
  2. Thread shrimp onto wooden skewers.
  3. Heat a grill or a grill pan to medium-high heat. Place the shrimp skewers on the grill and grill for 2–3 minutes on each side until the shrimp are bright pink and cooked through. 
  4. Add cherry tomatoes and cucumber to a bowl and drizzle with the remaining olive oil mixture. Gently toss. 
  5. Assemble the vegetable salad and shrimp skewers on a plate. Enjoy!
