Shrimp Skewers Recipe

Ingredients: 

  • ½ cup lettuce, chopped 
  • 3.8oz/110g shrimp, raw 
  • 1 small cucumber, sliced 
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tbsp fresh parsley, chopped 
  • 2 tbsp olive oil 
  • 1 tsp lemon juice
  • 1 garlic clove, minced

Instructions: 

  1. Add half of the olive oil, lemon juice, parsley, garlic, salt, and ground black pepper to a mixing bowl and whisk together. 
  2. Place shrimp in a bowl with prepared sauce. Mix together gently until the shrimp are well coated. 
  3. Thread the shrimp onto wooden skewers.
  4. Heat the remaining olive oil in a frying pan. 
  5. Place the shrimp skewers in the pan and cook the shrimp for 2–3 minutes on each side, or until they turn pink, opaque, and are cooked through. 
  6. Arrange the plate with lettuce, cucumber, and shrimp skewers. Enjoy!
