Ingredients: 

  • 1½ tbsp olive oil 
  • 3 medium eggs
  • 1 tomato, large, chopped
  • 1 tbsp fresh parsley, chopped 
  • 1 garlic clove, minced 
  • 1 pinch ground black pepper
  • 1 pinch salt

Instructions: 

  1. Heat olive oil in a frying pan over medium heat. 
  2. Add finely chopped tomato and garlic to the frying pan and cook for about 3–4 minutes. Gently crack the eggs into the frying pan over the tomato. Cover and cook for 4–5 minutes over low heat until egg whites cook. Season with salt and ground black pepper. 
  3. Garnish with parsley. Serve and enjoy!
