Shakshuka with Spinach and Egg Recipe

Try this amazingly looking variation with lots of greens – source of so much needed fibers.

Ingredients: 

  • ¼ small onion, sliced
  • 1 cup spinach
  • ½ cup kale, chopped
  • 3 medium eggs
  • 2 pinches ground black pepper
  • 2 pinches ground cumin
  • 2 pinches ground paprika
  • 1 ½ tbsp olive oil
  • 2 pinches dried oregano
  • 1 clove garlic, minced
  • 2 pinches salt

Instructions: 

  1. Heat a frying pan with olive oil over medium-high heat. 
  2. In the frying pan, add chopped spinach, kale, onion, garlic, salt, ground paprika, ground cumin, and ground black pepper. Cook for 3–5min stirring occasionally until sautéed. 
  3. In the same frying pan, crack the eggs, and season with dried oregano. Cover the frying pan with a lid. Cook for another 2–4min until the egg whites have set or until the desired doneness. 
  4. On a serving plate, serve shakshuka, and enjoy!
