 It’s also one of the cheapest options around, so you can enjoy it without worrying about breaking the bank.

Ingredients:

  • 1 tbsp onion, chopped
  • 1 tbsp olive oil
  • 3 tbsp water
  • 2 medium eggs
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1½ tbsp fresh basil, chopped
  • 4 tbsp cheddar cheese, grated
  • 1 clove garlic, minced
  • 1 medium tomato, chopped

Instructions:

  1. Heat olive oil in a frying pan and sauté the chopped onion until fragrant and lightly golden. Add minced garlic and cook for a minute more.
  2. Add chopped tomato and water to the pan. Season with salt and ground black pepper. Stir to combine.
  3. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes or until the sauce has thickened.
  4. Use a spoon to create wells in the sauce, then crack an egg into each well.
  5. Sprinkle it with cheddar cheese and let it cook for another 4–5 minutes.
  6. Remove from the heat and top with basil leaves. Serve and enjoy!

NOTE: Feel free to adjust the seasoning to your taste or use your favorite spices instead.
