Scrambled Eggs With Salad Recipe

Its an easy recipe that gives you everything you need for a nutritious and most important – delicious meal.


  • ½ small avocado 
  • 1 tbsp olive oil 
  • 2 tbsp water 
  • 2 medium eggs  
  • Salt and pepper, to taste 
  • 3 sprigs fresh parsley
  • ½ tbsp lemon juice
  • 7 medium cherry tomatoes, halved 


  1. In a bowl, whisk eggs with water, a pinch of salt, and ground black pepper. 
  2. Heat half of the olive oil in a frying pan over medium heat. Pour the egg mixture and let it sit, without stirring, for 20sec. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Remove from the pan when slightly runny. 
  3. Meanwhile, in a separate bowl, add avocado, cherry tomatoes, parsley, the remaining olive oil, lemon juice, a pinch of salt, and ground black pepper. Mix well. 
  4. Transfer the scrambled eggs onto a plate and serve with salad. Enjoy!
