Silky scrambled tailored to perfection.
Its an easy recipe that gives you everything you need for a nutritious and most important – delicious meal.
Ingredients:
- ½ small avocado
- 1 tbsp olive oil
- 2 tbsp water
- 2 medium eggs
- Salt and pepper, to taste
- 3 sprigs fresh parsley
- ½ tbsp lemon juice
- 7 medium cherry tomatoes, halved
Instructions:
- In a bowl, whisk eggs with water, a pinch of salt, and ground black pepper.
- Heat half of the olive oil in a frying pan over medium heat. Pour the egg mixture and let it sit, without stirring, for 20sec. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Remove from the pan when slightly runny.
- Meanwhile, in a separate bowl, add avocado, cherry tomatoes, parsley, the remaining olive oil, lemon juice, a pinch of salt, and ground black pepper. Mix well.
- Transfer the scrambled eggs onto a plate and serve with salad. Enjoy!
