Creamy scrambled eggs, crispy bacon, and melted cheddar cheese paired up with fresh spinach and chives – basically, scrambled eggs leveled up to perfection.


  • 3 eggs
  • 1½ tsp olive oil
  • 3oz/85g bacon
  • 2 tbsp sour cream
  • 4 tbsp cheddar cheese, grated
  • 1 cup spinach
  • 1 tbsp fresh chives, chopped
  • Salt, to taste
  • Ground black pepper

  1. Place a skillet over medium/high heat and add oil. Make the scrambled eggs and place them in a separate bowl. 
  2. Cut the bacon into small pieces and fry it on the same skillet until crispy. Then remove it from the skillet. 
  3. Add the sour cream and scrambled eggs to the skillet and cook them over low heat. Add salt and pepper (or any of your favorite seasonings).
  4. Mix in the cheddar cheese. Stir continuously until you reach a desired consistency. 
  5. Assemble your breakfast bowl by putting the scrambled egg mixture, fresh chives, spinach, and sprinkle it with crumbled bacon and more pepper, if desired.
