Try this salmon sushi bowl if you’re craving a fresh, earthy pair for your usual cauliflower rice. It’s loaded with proteins, healthy fats, and omega-3.

Ingredients:

  • 1 cup cauliflower rice
  • 1 smoked salmon filet, diced 
  • ½ tsp light soy sauce
  • ½ tsp sesame oil
  • ½ tbsp mayonnaise
  • 1 tsp sriracha
  • ¼ avocado, diced
  • ¼ cucumber, julienned
  • Salt, to taste
  • Black pepper, to taste

How to prepare:

  1. In a microwave, steam cauliflower rice with salt and pepper for 3–5 minutes.
  2. Combine the sriracha and mayonnaise in a bowl.
  3. Assemble the meal in a bowl, starting with cauliflower rice, and add soy sauce.
  4. Garnish with diced avocado, cucumber, and smoked salmon cubes.
  5. Drizzle with the dressing and sesame oil.
