Salmon Salad With Avocado and Spinach

The special thing about this salad is that you’re going to use grilled salmon filet instead of smoked salmon, adding some variety to your keto meals.

Ingredients: 

For the salad:

  • ½ tbsp olive oil
  • ½ tbsp lemon juice
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Salt and pepper
  • 4oz/115g salmon filet, skinless and boneless
  • 1 cup salad greens (lettuce, arugula, spinach, or your choice of mix)
  • ½ avocado sliced or diced
  • ½ onion, chopped
  • 1 tbsp sliced olives
  • 4–5 cherry tomatoes, halved
  • 2 tbsp crumbled feta cheese

For the dressing:

  • 1 tbsp olive oil
  • 1 tbsp white vinegar 
  • ½ tsp mustard
  • A few drops of stevia or other sugar-free sweeteners you have

Instructions: 

  1. Mix together the olive oil, lemon juice, garlic powder, onion powder, salt, and pepper. 
  2. Rub the mixture on the fish filet. 
  3. Grill on both sides for 4–5 minutes each or till fork tender.
  4. Cut into flakes. 
  5. Line a salad dish or bowl with the greens. 
  6. Add the fish flakes, avocado, onion, olives, and tomato.
  7. Blend the dressing ingredients together and pour over the salad. Toss well. 
  8. Top with feta cheese, and dig in.
