It’s a perfect way to use up that spare salmon or remaining avocado while only taking 10 minutes total – perfect for lunch.

Ingredients:

  • 1 small bell pepper, sliced
  • 1 cup spinach
  • ½ small avocado, sliced
  • 2 tsp olive oil
  • 1 tbsp butter
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 tbsp lemon juice
  • 1 pinch thyme, dried
  • ½ tsp lemon zest, grated
  • 120g/4.2oz salmon filet, raw

Instructions: 

  1. Melt butter in a pan over medium heat. Add salmon and fry for 4–5 minutes on each side until brown.
  2. Meanwhile, in a bowl, mix together lemon juice, olive oil, lemon zest, thyme, salt, and ground black pepper.
  3. Assemble spinach, bell pepper, and avocado on a plate. Shred the salmon and arrange it over the salad. Drizzle with the dressing, and enjoy!
