It’s a perfect way to use up that spare salmon or remaining avocado while only taking 10 minutes total – perfect for lunch.
Ingredients:
- 1 small bell pepper, sliced
- 1 cup spinach
- ½ small avocado, sliced
- 2 tsp olive oil
- 1 tbsp butter
- 1 pinch salt
- 1 pinch ground black pepper
- 1 tbsp lemon juice
- 1 pinch thyme, dried
- ½ tsp lemon zest, grated
- 120g/4.2oz salmon filet, raw

Instructions:
- Melt butter in a pan over medium heat. Add salmon and fry for 4–5 minutes on each side until brown.
- Meanwhile, in a bowl, mix together lemon juice, olive oil, lemon zest, thyme, salt, and ground black pepper.
- Assemble spinach, bell pepper, and avocado on a plate. Shred the salmon and arrange it over the salad. Drizzle with the dressing, and enjoy!
