Salmon With Vegetables and Mustard Mayonnaise Recipe

Full of healthy fats, and low in carbs, this is a great midday or evening meal on the keto diet.

Ingredients: 

  • 5 medium asparagus spears
  • ½ tbsp olive oil
  • 1 tsp mustard
  • 2 pinches salt
  • 2 pinches ground black pepper
  • 1½ tbsp mayonnaise
  • 115g/4oz salmon filet, raw
  • 6 medium cherry tomatoes, halved
  • 1 tsp lemon juice
  • 2 slices lemon

Instructions: 

  1. Season salmon filet with salt and ground black pepper.
  2. Heat olive oil in a frying pan over medium-high heat. Add asparagus and salmon to the frying pan and fry until the salmon is nicely browned for 4–5 minutes on each side (cooking time depends on the thickness of the salmon). Test the fish for doneness by poking the thickest part with a chopstick or fork – it should flake. Season to taste with salt and ground black pepper. Stir the asparagus from time to time.
  3. Meanwhile, mix lemon juice, mayonnaise, and mustard in a bowl.
  4. Serve salmon, asparagus, and tomatoes on a plate with mustard mayonnaise. Garnish with a few lemon slices. Enjoy!
